Iowa City Love

I had a great weekend spent in Iowa City this past weekend! On Saturday G & I went to the Iowa game with my parents and got to see the Hawks pull out a victory in overtime at Kinnick! It was the first game I had been to this year, and even though it was pretty brisk out, we had a great time and it was a very exciting game. It was especially fun watching a little girl from my hometown serve as the “Kid Captain” for the game. Check out her inspiring story below:

On Sunday I went back down to Iowa City to participate in the ZTA 5K–an annual fundraiser the ladies of ZTA host for breast cancer awareness and research. I got to see some of my favorite sorority sisters and their adorable babes–including my 7 month preggo friend who lives in L.A! She was in town visiting family for the last time before her baby girl arrives in January. We walked the 5k with strollers in tow and caught up while getting some fresh fall air. Seriously, such sweet kiddos–and they were troopers in the cold! It was a blast catching up with my friends, and felt great to support the ladies of ZTA and their worthy cause. It always brings back so many wonderful college memories when attending ZTA events!

Tomorrow is Halloween and we will be here giving out candy to the few kids who stop by trick-or-treating. Last year we had under 10 kids come by….not a real busy street for trick-or-treaters. My favorite part is always having a Papa Murphy’s Pumpkin shaped pizza for dinner and dressing Dory up in a costume! This year we’ll be recycling last year’s Hot Dog costume since it was so cute. Update--Amazing Pinterest Cookies!!

Make these cookies ASAP before the Fall White Chocolate M&Ms are not in stores anymore! I made them tonight for my amazing co-worker who so kindly fixed my computer for me, and they turned out even better than expected. (Click on the photo above for link to recipe).

Pinterest Best and Worst Part 2

We had a big bummer hit our house a couple of weeks ago. It was one of those things you just want to kick yourself for not preparing for. Our computer crashed.  A blue screen/no data/no helping yourself kind of crash. And just a month or two ago G had said we should back up our computer, because he thought it had been running slower than usual. {Ya, yah, yeahhhh we’ll do it sometime} Well, we should have done it. Luckily, working at a technology company, I have access to a lot of smart computer people. I brought it in to my favorite IT guy who tried everything he could to get the data off the corrupt hard drive. It was no luck…all gone. Pictures, documents, music. Gone, gone, gone. He pointed me in the right direction to buy a new hard drive, and he rebuilt my computer–which means it is working like new again. Luckily we didn’t have to buy a new computer. Sadly, everything else is still gone. He kept the old hard drive and said he’d keep trying to see if there was anything he could do, but my hopes aren’t very high.

So here is my PSA for the day– BACK UP YOUR COMPUTER FRIENDS!!! You never know when it will be too late!

I guess we are lucky that lots of my pictures are posted on Facebook, and I have several SD cards from my camera that I just saved with pictures, so not ALL is lost. But it was still very sad! Today I am going to make cookies for the IT guy who helped me for no charge. He saved us a ton of money and I’m so grateful for that!

Obviously I’ll be heading to Pinterest to find a delicious cookie recipe. He did warn me that he doesn’t like any peanut butter in his cookies {which, how crazy is that!?} so I’m thinking some sort of chocolate chip recipe will be the way to go.

I’m still using Pinterest to feed G and I several times a week. Here are a few favorites I’ve found recently:

Zesty Lime Shrimp & Avocado Salad

Now, I know this recipe might not be very “fall like”, but this is one of the most delicious salad’s I’ve ever made. It is so, SO easy and can really be a main dish OR side. G loved it, too. If you haven’t tried it yet, now is the time while we can still get avocados easily. Check out the recipe here.

Crispy Smashed Potatoes

These potatoes take a little more time to make, but I made about half as many as the recipe calls for since there are only the two of us, and it took a lot less time that way. My advice would be to start the oven as soon as you get home from work & get them cooking right away before you start cooking your main dish. Or make them on a Sunday for a terrific Sunday Dinner side dish. Totally worth the time, they are absolutely delicious. We dipped them in ketchup {of course} and the crispy outside/soft inside was a perfect combo. You can find the recipe here.

This one might surprise you! Carrots are not always delicious. In fact, very rarely would I call them delicious. But if you’re trying to eat healthier, this Carrots Au Gratin recipe is a great substitute for its unhealthy potato version. The only thing I didn’t like about this recipe, was it was not very good reheated the next day. When I make them again, I will likely cut the recipe in half and only serve it fresh. I might also try making it for a holiday side dish. Recipe can be found here.

I probably should have taken the hint when I had a hard time finding banana pudding. I can’t say this recipe was TERRIBLE, but I definitely wouldn’t make it again, and with a million other amazing recipes on Pinterest, I wouldn’t recommend you waste your time trying it either. The pokes really didn’t work that well, so the pudding just kind of sat on top of the cake. They say it gets better the longer it sits, but the Nilla Wafers and Bananas turned soggy/brown which is just kind of nasty. Don’t waste you time here…..(but if you don’t believe me, the recipe can be found here.)

And my last Pinterest worst is not a recipe but a craft. I have seen all kinds of these quotes on canvas projects and decided to try one on a lazy Sunday. Here was the inspiration:

You can find the tutorial I used here. When I started out, it was looking great. I really thought I was going to like the finished product. I looked through magazines and made a great collage. Then I put the letters down and painted over the whole thing. And that’s when things went downhill. I couldn’t get the letters up easily so they pulled some of the magazine up with them You couldn’t even read what it said, so I took a black Sharpe and went around the letters to make it more clear. I also added some little fabric rosettes to make it a little nicer. It didn’t turn out exactly how I wanted, but it’s okay. I have it hanging in our room because G told me he liked the quote. Here is my version….
